Raw Chocolate Silk Pie with Coconut Whipped Cream

There is this hidden Thai food Restaurant in Austin TX called “Thai Fresh” that also makes vegan desserts. They have an assortment of cakes, pies and coconut ice cream with such unique flavours. Whenever I travel to Austin it’s on my list of places for dessert. One of my favorite pies is their chocolate pie. It is unbelievable! I was inspired to make my very own version of their vegan pie. After a couple of attempts I finally nailed the recipe.

It’s so rich and creamy it's hard to believe its vegan free from gluten and refined sugars.
